Tomato Bisque Tomato Soup Yield: 4-6 Servings
~1 Large Yellow Onion, peeled and roughly chopped
~4 Cloves of Peeled Garlic
~50 ml Canola Oil
~3 12 oz cans of Crushed Tomatoes
~250 ml Myriad View Strait Shine
(or Strait Vodka or Strait Gin)
~1 oz Fresh Basil
~500 ml Whipping Cream
Sea Salt and Cracked Black Pepper to taste
Sour Cream
~250 g Sour Cream
~50 ml Whipping Cream
Juice of 1 Lemon
~10 g Cracked Black Pepper
~10 g Finely Chopped Basil
Tabasco and Salt to taste
Method
For the Soup:
Sweat the Onions and Garlic with the Canola Oil in a large Heavy
Bottomed Pot until the Onions are translucent. Deglaze with the
Moonshine, and add in the Tomatoes and Basil. Allow to simmer for
20 minutes, Puree and finish with the cream and Season to taste.
Ladle into a Bowl and top with a dollop of the Sour Cream.
For the Sour Cream:
Mix all the ingredients together in a bowl. Reserve until the Soup is
ready.
