| Strait Gin |  |
|
 Gin is a spirit whose major flavour characteristics derive from juniper berries and smaller amounts of other botanicals. These commonly include coriander, orris root, angelica root, lemon peel and anise to name but a few.
However, not all Gins are created equally. Base gins merely soak the botanicals in alcohol from any source. Most commercial gins boil the botanicals directly in the body of the still along with a basic grain spirit. In crafting Strait Gin, our already pure triple distilled Strait Vodka is distilled a fourth time through our unique blend of botanicals. These eight hand-picked organically grown herbs and spices gathered from five continents, are gently wrapped and suspended in our separate and specially designed stainless steel botanicals vessel. By the careful control of this fourth distillation, pure alcohol vapour subtly distills out the essential oils and characteristic flavours of these eight botanicals to yield a true distilled gin of distinction.

| Strait Lightning |  |

 During Prohibition, White Lightning was a common term for raw, un-aged spirit. White because all distilled spirit is clear when collected from the still. Only after ageing in oak barrels or with the addition of other agents does it develop any colour.
Fermented on site from pure cane sugar and high quality molasses and carefully double distilled in our state of the art copper still. Collected from the still at over 90% alc./vol. Blended in small batches and bottled at 75% alc./vol. using only our most pure alcohol.
Strait Lightning is our over-proof signature drink that captures the spirit of unadulterated freshly distilled alcohol. Warming and smooth with overtones of caramel.

| Strait Rum |  |

 Rum truly is an Island Spirit. Sugarcane, introduced into the West Indies in 1493 by Christopher Columbus, rapidly spread to many tropical islands and then to South America. By the early 1500's many Islands were producing a distilled spirit from fermented cane sugar and molasses. From the romance of pirates and smuggling, to triggering calls for prohibition for widespread misrule and drunkenness, Rum has a rich history steeped in social politics and notoriety.
Produced from pure cane sugar and molasses. Strait Rum is fermented, lovingly distilled and aged in select American oak barrels on-site.
Available in two strengths 40% alcohol by volume and Historic 100' Proof (57.1% alcohol by volume).
Aged amber rums of character.
Smooth, flavourful and warming.

| Strait Shine |  |

 Bringing a novel product like Shine to the commercial market was the driving force behind the birth of our company. Strait Shine is our homage to the era of Prohibition and illegal moonshining. PEI endured prohibition for the longest time in all of Canada. It played an active role in illegal shine production and its illicit shipment to the USA. Consequently PEI and Shine have a rich interwoven and largely untold history.
The differences between illegal moonshine and Strait Shine are very simple:- quality, consistency and taxes. If Al Capone had paid his taxes, he wouldn't have gone to jail!
In creating Strait Shine, we have tried to be true to the history and spirit of illegal moonshine, yet deliver a smooth, consistent, pleasing and legal product.
Fermented on-site from pure cane sugar and high grade molasses and carefully distilled through our state of the art copper still. Perfectly blended to create the unique character and flavour that is Strait Shine.
Bottled at 50% alc./vol. Tax paid. Novel and unique.

| Strait Vodka |  |
|
 Vodka is a relative newcomer to the spirit market. Before the 1950's it was rarely drunk outside of Europe. James Bond, the vodka martini and history did the rest.
Quintessential vodka should be free from any off flavour or aroma derived from its basic ingredients. As distillation technology has improved, it has become possible to remove almost all flavours in this neutral spirit. Although vodka can be made from any sugar source, the vast majority of vodka world-wide is grain based. Grain is generally considered to yield the best and most neutral flavour and is therefore considered closest to the ideal of a truly neutral spirit.
In crafting Strait Vodka we start with a Canadian pure grain alcohol. This vodka grade spirit is further distilled twice. In this manner we create a truly triple distilled and pure vodka.
In our opinion, Strait Vodka has an exceptionally smooth and neutral flavour, with hints of natural sweetness that show its Canadian grain origins.
